When the owners of a wedding venue group needed to open a new wedding barn, they appointed CKD to manage the kitchen project for them.
Operating as sub-contractors to CKD, BWF were engaged to provide the kitchen ventilation system.
.
The Design
In order to cater for large weddings, the kitchen needed a substantial conventional back of house kitchen area as well as a front of house show kitchen featuring a large charcoal grill, charcoal fuelled pizza oven and rotisserie.
Given the size and nature of the events being catered for, reliability and resilience were extremely important.
In order to deliver the design brief, BWF’s system comprised of:
- A large wall mounted extract and supply air canopy in the front of house show kitchen area, fully powder coated in black with matching black powder coated stainless steel wall cladding to all walls.
- Another large, conventionally finished, stainless steel extract and supply air canopy in the back of house area.
- An integrated high-capacity extract and supply air system with an extract duct / building interface designed to provide protection to handle high temperatures.
- High capacity and high temperature rated “motor out of airstream” fans.
- A completely separate stand-alone system for the pizza oven to ensure resilience.
DW/172 compliant, CO / CO2 sensing and separate automated control of both systems
